SNACK time!

These are GREAT recipes and good for long runs or bikes.

Energy balls
1/2 cup almond butter
1/2cup of tahini
1/4 cup unsweetened shredded coconut
1/4 cup sunflower seeds, sesame or flax seeds or combo of each
some stevia to taste
In a food processor combine all at high speed
form into 12 balls, can be frozen
Baked apple with peanut butter
core apple and put cinnamon on and put in microwave for 1 min to soften
mix 1 tabsp natural peanut butter or any nut butter, 1tbsp unsweetened coconut and stavia to taste. Mix all ingredients and add to center of apple return to microwave for 30seconds or more, enjoy
Peanut butter bites
1 1/4 cups canned chickpeas
1/2 cup plus 2 tbsp. natural peanut butter
2 tsp vanilla extract
1/4 cup stavia or to taste
1 tsp baking powder
combine all in food processor
wet hands then roll into balls
bake 10 min at 350 degrees in middle rack
(my son likes some raw and most baked.
“chocolate” bars
2 454gram jar of organic coconut butter (not coconut oil)
8 tbsp. carob powder (I am assuming you can have carob powder)
stevia to taste
1tsp vanilla extract
mix all ingredients  in a large bowl and place over hot water, stir until melted then spread on a cookie sheet and place in fridge for 2 hours
you can add any shopped nuts or seeds, I used pumpkin seeds. If you can’t have carob you can add mint extract or butterscotch extract. Break ain pieces and eat as is or add to above cookies.
