Good Stuff Recipes

Hey Vy,
Here are some of the healthy recipes I have tested and like.

Hot Blueberry Cereal
1c. milk                                     combine milk, water, quinoa in pan. bring to boil and reduce heat to simmer until liquid absorbed. let stand for 5
1c. water                                  mins. add maple syrup and yogurt. You can us almond milk if you do not do dairy
1c. quinoa
1c. dried blueberries
1 tsp cinnamon
1/2c chopped walnuts
4tsp maple syrup
4tbsp plain yogurt

Energy Balls
1c. rolled oats                         mix all together and refrigerate 45 mins to an hour. roll into small balls and keep in fridge. (I find it is hard to
1/2c. peanut butter               keep mix together and add extra peanut butter)
1/3c. raw honey
1/2c. ground flax seeds
1/3c. coconut
1/3c. raw sunflower seeds
1/2c. mini chocolate chips
1/4tsp salt
1 tsp vanilla

Orange Fruit Bars
1 1/2c. pitted dates, chopped                      place all ingredients in a food processor and blend until mixture begins to
1c. apricots, chopped                                     stick together. place on a lightly greased or parchment lined baking sheet. press firmly
1/2 c. finely chopped dark chocolate
1/2c. granola
3tbsp maple syrup or honey
2tsp finely chopped fresh ginger
zest of 1 orange
1/2 tsp sea salt
1/2 tsp cinnamon

Some Smoothie Options
Popeye’s Smoothie
1 1/2c. OJ
1c. spinach
1/2c. greek yogurt
1 tsp grated fresh ginger
1/2 c. walnut pieces
1/2 c. frozen/fresh strawberries
1/2 c. frozen mangos (I usually do extra strawberries or blue berries)

Blue Bomb Almond Smoothie
1 1/2c. almond milk or other milk
1/2 c. low rat ricotta cheese ( I use greek yogurt)
1/2 tsp almond extract
1/4tsp cinnamon
1/4c. unsalted almonds
1c. frozen blueberries

Green Monster Smoothie (acquired taste, Vy will like)
1 1/2c. coconut water,
1c. milk of choice  (almond)
1/2 lime juiced
1 medium avocado
1/4c. fresh basil
1 tbsp honey
dash of salt
1 tsp zest of lime

Banana Mocha
I make this one up….frozen banana, almond milk, frozen ice cubes of coffee, cocoa and almonds. Often add protein powder to all of these smoothies
